This was the first time I made hot cross buns to start carrying forward an Easter tradition from the UK that my husband had growing up there.

Since it was the first time, I stayed with a traditional version as often happens before you get familiar with making a dish.

I discovered these are best warm from the oven.

Ingredients

50g sugar
14g dried yeast
2/3 cup warm milk
450g flour
1 egg beaten
3.5 tbsp melted and slightly cooled butter
100g raisins
1/2 tsp cinnamon
1/4 tsp dried ginger
1/4 tsp nutmeg
1/4 tsp allspice

Directions

Add 1 tsp of the sugar, yeast, and warm milk to a large mixing bowl. Allow to get bubbly 15-30 minutes.
Add flour, egg, butter, the rest of the sugar and the raisins. Knead using a dough hook or by hand until the dough is smooth, 10-15 minutes.
Transfer dough to a bowl sprayed with oil. Cover with plastic wrap and let puff up for an hour or until double in size.
Divide dough into 12 even pieces using a scale if you want to be precise. Roll each piece into a ball.
Add to cookie sheet sprayed with oil. Score the top with a sharp knife where the crosses will be piped. Cover with wet paper towels and let puff up for 30 minutes.
Preheat oven to 400F.
Pipe crosses onto buns with bag or baking syringe.
Bake for 12-15 minutes until golden brown and sound hollow when tapped on the bottom.
Brush with the syrup while hot after removing from the oven.

It worked very well especially for the first time.

This was a version before having the sourdough starter so it uses commercial yeast.

Ingredients

4 tbsp flour
water

Directions

Mix the flour and water together to form a thick paste that can be piped.

Glaze

Ingredients

2 tbsp sugar
1 tbsp water

Directions

Heat the sugar and water together on the stove until dissolved.
